Zoodles with Creamy Avocado & Basil

Lately I've been researching healing properties for food and nutrition, mostly for my own personal healing.  During my research, I saw a video titled "Fully Raw Kristina", which discusses Kristina's 10-year journey into a fully raw diet.  She was so enthusiastic and passionate about this topic that it encouraged me to give it a try, by eating a "fully raw" lunch.

I've been wanting to try zoodles (or zucchini noodles) for a long time, so I looked for some recipes and created my personal variation of Zoodles with Creamy Avocado & Basil. 

Here's the recipe. Hope you enjoy it!

Ingredients (serving 1)

  • 1 medium-size zucchini
  • 1/2 avocado
  • 1/3 cup water
  • Freshly squeezed lemon juice (use half a lemon)
  • Handful of basil leaves
  • 3-4 walnuts for topping (or as many as you like)

To make the zoodle
Cut the zucchini into noodles or spaghetti shapes (Use a knife so they were pretty raw in the shape and it took about 10-15 mins - if you have a veggie shredder or spiralizer it will be easier and faster).  If you are unsure, here are some instructions on 14 different ways to make zucchini noodles:  https://feedyourskull.com/2012/08/22/14-methods-to-make-zucchini-noodles/

To make the sauce:
Combine the other ingredients (except for walnuts) into a blender and blend until smooth.

Mix zoodles and sauce and add chopped walnuts on top to serve.

And that's it! 

Easy, quick, and yummy!
